Two Stacks Double Irish Cream Liqueur Review (2025)

 


One of the things I love about Fall is all of the whiskey cream liqueurs that hit the market. I’m a sucker for the great ones, and they come from around the world. Be it eggnog, Irish cream, Bourbon cream, or a host of others, they’re a good, holiday diversion from a straight pour of liquid sunshine.

 

Two Stacks Whiskey Co. is a whiskey brand founded in 2020 by Shane McCarthy, Liam Brogan, and Donal McLynn. It is one of only a handful of independent bonding and blending facilities in Ireland, and its new Two Stacks Double Irish Cream Liqueur has launched nationally, just in time for the holidays.

In March, I reviewed Two Stacks "The First Cut" Signature Blend Irish Whiskey, a four-year-old whiskey distilled from Great Northern Distillery. That’s the whiskey component of the Double Irish Cream Liqueur. This 4+ year-old fine whiskey from Great Northern Distillery is made from a unique blend of 40% grain (Bourbon Cask), 40% grain (American Oak), 8% pot still, 10% double malt, and 2% peated malt.

 

The cream blended with the whiskey is sourced from Robert A. Merry & Co. in Clonmel, Co. Tipperary, which is cited as Ireland’s premier dairy region.

 

What particularly excites me about today’s #DrinkCurious experience is the use of peat. I’ve never had that in a whiskey cream. I love peat, and while it is only a small portion of the whiskey, my fingers are crossed that it will firstly be identifiable and secondly, complementary.

 

According to Two Stacks Whiskey Co., its Irish Whiskey Cream Liqueur contains eight times the whiskey volume of the leading Irish cream liqueur brands. Will that become apparent?

 

Thankfully, Two Stacks Whiskey Co. has provided me with a sample in exchange for my no-strings-attached, honest review. And, before I get started, I did chill this in my refrigerator for a few hours before pouring it.

 

  • Whiskey Type: Liqueur
  • Distiller: Great Northern Distillery
  • Age: NAS
  • Mashbill: 40% grain (Bourbon Cask), 40% grain (American Oak), 8% pot still, 10% double malt, and 2% peated malt, fresh dairy cream
  • Cooperage:  Former Bourbon casks and American oak
  • Alcohol Content: 17.5% ABV (35°)
  • Price per 750mL: $35.00

 

Appearance: I used a Canadian whisky glass to explore this Irish cream. It looked exactly like chocolate milk. While I’m unsure what it might suggest, I observed a thick rim with evenly spaced, wide, slow tears.

 

Nose: While exploring the nose, the first thing I smelled was milk chocolate, much like a freshly-made Hershey’s bar, which was followed by rich vanilla cream and a touch of nutmeg. I inhaled the vapor into my mouth and found more vanilla cream. So far, no peated smokiness.

 

Palate: The texture was dense and creamy, much like drinking a milkshake. I tasted malted milk chocolate, vanilla, nutmeg, and toffee. It lacked a front, middle, or back (and no peat).

 

Finish: Along with malted milk chocolate and vanilla came a gentle, smoky quality. The experience lasted 48 seconds, which was longer than I had anticipated from a whiskey cream.

 

Bottle, Bar, or Bust: If you’re afraid of or have a general dislike of peat, don’t let that stop you. It is pretty subtle and, frankly, the other flavors are the stars of the show. I found Two Stacks Double Irish Cream Liqueur to be sinfully elegant. It is one of those things that I don’t even care what it costs, and I don’t foresee my Bottle sticking around. Cheers!
